Dutch Duivekater Recipe (Traditional Sweet Bread)

Ingredients:

For the dough:

  • 500 g (4 cups) all-purpose flour
  • 1 packet (2 ¼ tsp) active dry yeast
  • 100 g (½ cup) granulated sugar
  • 1 tsp salt
  • 200 ml (¾ cup + 2 tbsp) warm milk
  • 2 large eggs, beaten
  • 100 g (7 tbsp) unsalted butter, softened
  • Zest of 1 lemon

For the topping:

  • 1 egg, beaten (for egg wash)
  • 2 tbsp granulated sugar (optional, for sprinkling)

Instructions:

  1. Prepare the yeast mixture:
    • In a small bowl, dissolve the yeast in warm milk. Let it sit for 5–10 minutes until frothy.
  2. Make the dough:
    • In a large bowl, combine the flour, sugar, salt, and lemon zest.
    • Add the frothy yeast mixture and beaten eggs. Mix until a rough dough forms.
    • Knead in the softened butter, a little at a time, until the dough becomes smooth and elastic. This can take about 8–10 minutes by hand or 5–7 minutes in a stand mixer with a dough hook.
  3. First rise:
    • Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for 1–1.5 hours, or until doubled in size.
  4. Shape the bread:
    • Punch down the risen dough and shape it into an elongated oval loaf.
    • Place the loaf on a parchment-lined baking sheet. Use a sharp knife to make decorative slashes or cuts in the surface for the traditional look. Cover lightly with a cloth and let it rise again for 30–45 minutes.
  5. Preheat the oven:
    • Preheat your oven to 180°C (350°F) during the second rise.
  6. Prepare for baking:
    • Brush the loaf generously with the beaten egg for a shiny finish. If desired, sprinkle sugar over the top for added sweetness.
  7. Bake the Duivekater:
    • Bake the loaf in the preheated oven for 30–35 minutes, or until golden brown and it sounds hollow when tapped on the bottom.
    • Cool the bread on a wire rack before slicing.
