Ingredients
For the Chicken:

- 2 tbsp olive oil
For the Sauce:
- 2 tbsp unsalted butter
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/3 cup grated Parmesan cheese
- 1/2 cup sun-dried tomatoes, chopped (packed in oil, drained)
- 2 cups fresh baby spinach
- 1 tsp Italian seasoning
- Salt and pepper, to taste

Instructions
- Prepare the Chicken:
- Season both sides of the chicken breasts with garlic powder, onion powder, paprika, salt, and pepper.
- Sear the Chicken:
- Heat olive oil in a large skillet over medium-high heat.
- Add the chicken and cook for 4–5 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- Make the Sauce:
- In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Pour in the chicken broth and scrape the bottom of the skillet to deglaze.
- Stir in the heavy cream, Parmesan cheese, and Italian seasoning. Simmer for 2–3 minutes until the sauce begins to thicken.
- Add the Vegetables:
- Stir in the sun-dried tomatoes and baby spinach. Cook for 2–3 minutes until the spinach wilts.
- Taste the sauce and adjust seasoning with salt and pepper as needed.
- Combine and Serve:
- Return the chicken breasts to the skillet, spooning the sauce over the top. Simmer for 2–3 minutes to reheat the chicken and let the flavors meld together.
- Garnish with fresh basil and extra Parmesan if desired.
