Prep Time: 10 minutes
Cook Time: 20 minutes
Servings: 4

Ingredients

For the Chicken:

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • Salt and pepper, to taste
  • 2 tbsp olive oil

For the Sauce:

  • 2 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/3 cup grated Parmesan cheese
  • 1/2 cup sun-dried tomatoes, chopped (packed in oil, drained)
  • 2 cups fresh baby spinach
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste

Optional Garnishes:

  • Fresh basil leaves
  • Extra grated Parmesan

Instructions

  1. Prepare the Chicken:
    • Season both sides of the chicken breasts with garlic powder, onion powder, paprika, salt, and pepper.
  2. Sear the Chicken:
    • Heat olive oil in a large skillet over medium-high heat.
    • Add the chicken and cook for 4–5 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. Make the Sauce:
    • In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
    • Pour in the chicken broth and scrape the bottom of the skillet to deglaze.
    • Stir in the heavy cream, Parmesan cheese, and Italian seasoning. Simmer for 2–3 minutes until the sauce begins to thicken.
  4. Add the Vegetables:
    • Stir in the sun-dried tomatoes and baby spinach. Cook for 2–3 minutes until the spinach wilts.
    • Taste the sauce and adjust seasoning with salt and pepper as needed.
  5. Combine and Serve:
    • Return the chicken breasts to the skillet, spooning the sauce over the top. Simmer for 2–3 minutes to reheat the chicken and let the flavors meld together.
    • Garnish with fresh basil and extra Parmesan if desired.
  6. Serve:
    • Serve the Creamy Tuscan Chicken over pasta, mashed potatoes, or with crusty bread to soak up the delicious sauce.

Tips:

  • For a lower-carb option, serve with cauliflower rice or zucchini noodles.
  • Substitute kale for spinach if you prefer a heartier green.
  • To save time, use pre-cut chicken tenderloins instead of whole breasts.
